Blueberry Flaxseed Pancakes
Fluffy pancakes with
ground flax seed and blueberries for a healthier,
fiber filled breakfast. Blueberries rank very high
in body-friendly anti-oxidants and are rich in
pectin, a soluble fiber shown to reduce cholesterol.
Ground flaxseed provides heart-healthy Omega3 fatty
acids which are good for the immune system, and
regulate inflammation and cholesterol. Be sure to
use ground flaxseed, not the whole flaxseed.
Ground flaxseeds are available in grocery and health
food stores (Bob's Red Mill is popular) and should
be stored in a cool, dry place.
INGREDIENTS:
1 1/2 cups dry pancake
mix (Bob's Red Mill is a good choice)
1/2 cup flax seed meal
1 cup skim milk
2 eggs
1 cup fresh blueberries (may substitute
frozen)
DIRECTIONS:
1. Set a nonstick
skillet or griddle over medium heat.
2. In a medium bowl, stir together the pancake mix
and flax seed meal. In a separate bowl or measuring
cup, whisk together the milk and eggs. Pour the
liquid into the dry ingredients, and stir just until
moistened.
3. Spoon 1/4 cupfuls of batter onto the hot skillet.
Sprinkle with as many blueberries as desired. Cook
until bubbles appear on the surface, then flip and
cook until browned on the other side.
